What's for Dinner?

Here's the plan for this week...

SUNDAY: Grilled Chicken Wraps
We finally have some beautiful grilling weather here in Oklahoma!!
 
MONDAY:  Breakfast for Dinner
scrambled eggs, biscuits, bacon, the works...
 
TUESDAY:  Taco Salad
The younger littles are finally coming around to our Mexican nights...yay!
 
WEDNESDAY:  Crescent Chicken
This is probably my kids favorite meal.  Got it from my favorite blog.

THURSDAY:  Pasta Bake
  
FRIDAY:   Pizza
I'm still all about Pizza.
 
SATURDAY:  Broccoli Cheddar Soup
This is my favorite soup...tastes so much like Panera's broccoli cheddar.  It's even better as left overs so I like to make a big batch.  This one didn't happen this past Saturday so it's back on the list for this week.

What's for Dinner?

I'm a little late but here's what we're having this week...

SUNDAY: Dinner with Family
Graham's birthday celebration seemed to go on all week.  We finished it up last night with dinner out.  I think he had a great birthday.  LOVE that boy!
 
MONDAY:  Pancakes
Pancakes for dinner!

TUESDAY:  Chicken Ole'
Chicken, salsa, black beans and corn in the crock pot..everyone loves it!  I'm making extra so we will have left overs.
 
WEDNESDAY:  Tilapia
Tilapia and veggies on the grill is one of my favorites.  I'll probably be coming up with "Plan B" for 2 out of the 3 kids.

THURSDAY:  Chicken Nachos
I'll use the leftovers from Tuesday night to make chicken nachos. This is a favorite at our house.
  
FRIDAY:   Pizza
I'm still all about Pizza.
 
SATURDAY:  Broccoli Cheddar Soup

What's for Dinner posts are back!
Here's what's for dinner this week...

SUNDAY: Dinner with Family
We are visiting family today to celebrate that my biggest little is turning 13 this week.  Breaks my heart a little that he's getting so big so fast!  I'm not sure what we'll be having for dinner but I know he requested ice cream for dessert.  I haven't had ice cream since before my 28 day challenge so I'm all over that.
 
MONDAY:  Breakfast Burritos
We've taken a break the past few weeks on breakfast for dinner but I think we will return to our Monday night ritual.  Everyone loves breakfast burritos at my house.

TUESDAY:  BBQ Chicken
It's going to be HOT here this week so I think I'll do crockpot BBQ chicken to avoid using the oven. 
 
WEDNESDAY:  Manicotti
My baby will be 13 on Wednesday.  He LOVES pasta so I'm making manicotti and cheese bread.

THURSDAY:  Baked Potato Bar
This has become a new favorite.  Everyone loves them and can pick their own toppings.  Easy.  Love it.
  
FRIDAY:   Pizza
Pizza was the thing I missed the most during the 28 day challenge.  Can't wait for Friday!
 
SATURDAY:  Chicken Pot Pie
This is one of Nora's favorites and she's been asking for it for a while now.  It made the menu board this week and she is HAPPY.

What's for Dinner?

Considering that last week was jam packed with back to school parties and practices and all sorts of random events, we did a pretty good job at eating at home.  We only ate out one night and only deviated from the plan one night.  I'm super excited this week to be finished with my 28 to Great Challenge!!  I CAN'T BELIEVE I DID IT!!!  I'll post more about that later but I'm just glad to be a little bit more relaxed about the meal plan!!

SUNDAY: Breakfast Casserole
I have a loaf of Great Harvest whole wheat bread in the freezer so I'll use that for the base of the casserole.  I can't wait to add some cheese on top!  28 days is way too long to go without cheese!
 
MONDAY:  Chicken Noodle Soup
Everyone loves this and it's so easy to make.  I make it in the crockpot so it's super easy.

TUESDAY:  Black Bean Layered Dip
I've been missing this one.  We love to have this dip as a meal
 
WEDNESDAY:  Grilled Halibut & Veggies
We'll probably add some chicken for the fish haters in the family.  I can't wait to grill some sweet potatoes...they are my new favorite!

THURSDAY:  Spaghetti & Meatballs
  
FRIDAY:   Eat Out
I'm not cooking EVERY night!
 
SATURDAY:  Hamburgers on the Grill
This was on the list for last night but we changed it up and had black bean soup so we will try it again for next weekend.  I've gotten used to having my hamburgers lettuce wrapped.  I'm not sure whether I'll go back to the bun or not...

What's for Dinner?

It's Back to School week!  That means our afternoons and night get crazier...homework, soccer, cheerleading, dance, xcountry, youth group, and the list goes on.  I'm determined.  Eat at home...eat healthy.  This also marks the LAST week of my whole foods challenge.  I've missed a few things but for the most part, I've decided to stick with the whole foods plan as much as possible and will gradually try to convert my family too.  Aren't they lucky?
Here's what's for dinner this week...

SUNDAY: Whole Wheat Banana Pancakes
I love these pancakes.  We are going to make a huge batch and freeze them for a quick breakfast.  It's like dessert.
 
MONDAY:  Black Bean Salsa Chicken
This one makes the whole family happy and it's one of my favorites because I just dump it all in the crockpot and it's ready to go in a few hours.

TUESDAY:  Leftover BBQ
Graham had a cross country picnic on Saturday and one of the dad's makes awesome BBQ.  At the end of the night, he sent everyone  home with leftovers.  SCORE!
 
WEDNESDAY:  Pasta Night

THURSDAY:  Brown Rice Veggie Stir Fry
  
FRIDAY:   Eat Out
I'm not cooking EVERY night!
 
SATURDAY:  Hamburgers on the Grill
I've become a huge fan of the lettuce wrapped burger over the past 28 days.

What's for Dinner?

Well, we didn't stick to the plan last week like we should have HOWEVER we only ate out once.  We had a lot going on last week so we ended up doing some last minute meals on a few nights.  This week is full of back to school parties and late afternoon activities so we might not do any better this week but we'll try.   Here's the plan...eat at home and eat healthier.

SUNDAY: Red Bean and Quinoa Chili
I'm getting this recipe from the 28 to Great Barre 3 plan.  Summer doesn't really scream chili to me but I'm getting a little tired of grilled chicken and want to try something new.
 
MONDAY:  Breakfast for Dinner
I'm not sure what we're going to have but I'm sticking to our regular Monday night Breakfast for Dinner plan.  It makes everyone happy.

TUESDAY:  Baked Potato Bar
The kids have been asking for this one.  Easy...love it.  I'll have a sweet potato.  YUM
 
WEDNESDAY:  Grilled Chicken & Roasted Veggies
Even though I'm a little tired of grilled chicken, the kids love to have the leftovers for lunch during the week to make chicken nachos so we're going with it.

THURSDAY:  Pasta Primavera
This sounds delish.
  
FRIDAY:   Happy 16th Wedding Anniversary to me and mine!
We must celebrate!
 
SATURDAY:  Back to School Party
 If it gets me out of cooking dinner, I'm there!

What's for Dinner?

We did it!  We stuck to the plan last week.  I actually ate at home every night (gold star) and the rest of the family ate pizza out once.  We are at it again this week...trying to eat healthier and trying NOT to eat out as much.  Here's the plan:

SUNDAY: Chicken Lettuce Wraps
I'm getting a little creative this week.  I'm trying to prepare meals that work with my 28 day whole foods challenge so I can eat the same thing as the family.  We've never done lettuce wraps before so I'm not sure how this one will go over.  Not sure it will be kid approved but we'll see.
 
MONDAY:  Scramblers
Scramblers have pretty much become a Monday night regular. Everyone chooses their own "add-ins" so no one complains.  I'm thinking broccoli and tomato for mine.

TUESDAY:  Mexican Sweet Potato Skins
I'll have to omit some ingredients from this recipe and I'm pretty sure that the kids will eat theirs in tortillas instead but I'm excited to try this.  I have a new found love for sweet potatoes.
 
WEDNESDAY:  Lemon Caper Tilapia
I'm putting Nathan in charge on this night.  We love to do fish and veggies on the grill.  Really, I love to do any meal on the grill because it gets me out of cooking.
 
THURSDAY:  Spaghetti Squash
I am determined to get the consistency right this time.  There must be some sort of secret trick to spaghetti squash.  Either I cook it too long or I don't cook it long enough.  This week, I'm going to get it right.  This little vegetable still fascinates me.  It's amazing how it turns into "noodles" when you cook it. 
 
FRIDAY:  Grilled Lemon Chicken
I never cook on Friday nights but I'm going to try not to eat out during my whole foods challenge because I really want to stick to it and I'm afraid I'd cave at a restaurant. 
 
SATURDAY:  Stir Fry
It's back on the menu this week because everyone loves it.  The kids like their chicken and veggies over skinny noodles.  Nathan and I have ours over brown rice.

What's for Dinner?

We pretty much stuck to the plan last week.  We are at it again this week...trying to eat healthier and trying NOT to eat out as much.  Here's the plan:

SUNDAY: Lemon Chicken
I'm officially starting my 28 day challenge today.  For the next 28 days I am going to do my best to eat (mostly) whole foods and exercise 6 days a week.  I'm starting out with lemon chicken (got the recipe from the 28 day challenge book) and hopefully we will have some left over for lunches this week.
 
MONDAY:  Scramblers
Always a favorite at our house!  I won't be able to add the cheese and the side of hash browns but I'm still looking forward to my egg, avocado and tomato scrambler.

TUESDAY:  Hamburgers
I love grillin' nights.  Nathan's in charge of dinner!
 
WEDNESDAY:  Halibut
I'm trying a new recipe...ginger halibut.  I'm sure all 3 kids will be thrilled! Not really...we're still working on our love of fish over here.
 
THURSDAY:  Pasta Night
Since I'm going all whole foods on the fam, I'm going to use a brown rice pasta.  I'm sure the kids will be thrilled about this too.
 
FRIDAY:  Eat Out
I'm not cooking EVERY night!  I am worried about eating out during my 28 days though so I might just declare this a FIFI night.  At our house we have FIFI nights on the nights that mom's too tired to cook.  Find It, Fix It...eat it.
 
SATURDAY:  Stir Fry
I'm making lots of chicken on Sunday so we can freeze some and then use it for veggie stir fry on Saturday.  I think I'll even get out the wok for this one.

What's for Dinner?

We had a menu plan FAIL last week.  We started out great but on Wednesday the kids got invited to spend a few days with their grandparents so we were kid free for the last part of the week!!  We took advantage of it and ate out a few nights.  We also rented movies and went to a movie and slept in late!!  Yippee for grandparents!! 
 
This week will be odd too.  The middle and the big are leaving for camp today and with only Charlie here (MR. PICKY!) our meal plan might suffer.  We're hoping for the best.  Here's the plan:

SUNDAY: Eat Out
Yes, the goal is NOT to eat out BUT we told Charlie he could pick a few things that he wanted to do this week since he'll be the "only child" and eating out for dinner is one of them.  We'll go where he picks but I'm going to push my agenda on him and try to get him to pick Jamba Juice.  Nathan and I love to have smoothies for dinner and they have a pizza or pretzel kid's meal so I think he might go for it.  If not, I guarantee we'll be eating at Charlie's Chicken.
 
MONDAY:  Grilled Chicken
We're going to grill out chicken and veggies and do some extra chicken for a few other meals this week.

TUESDAY:  Spinach Salad
I can't get enough of the strawberry spinach salad but Nathan's not a huge fan.  As long as he has some of the leftover chicken, he'll be happy to eat a spinach salad.
 
WEDNESDAY:  Hamburgers
It's not supposed to be as hot this week so Nathan said he wanted to grill a few times so hamburgers it is.  YUM.  I love hamburgers on the grill.  So much for that day that I thought I was going to become a vegetarian.
 
THURSDAY:  Fajitas
We'll use the extra chicken we grill on Monday. 

FRIDAY:  Dinner with friends
We gotta have fun sometimes!!
 
SATURDAY:  Pasta Night
All the kids will be back home safe and sound so we'll do their favorite meal.  Despite the fact that I've been trying to break up with pasta night, I decided it would make a good "welcome home" meal since they love it so much.

What's for Dinner?

We just walked in the door from a week long trip to Breckenridge, Colorado and the first thing on my mind was planning our meals for the week.  We ATE and ATE and ATE while we were there.  We ATE LOTS of yummy, not good for you, greasy, heavy, delicious food.  We had cheese fries, crepes, ice cream, greasy hamburgers, biscuits and gravy, and the list goes on.  It was wonderful while we were eating it and awful after we had miserably stuffed ourselves and my only saving grace was that we hiked several miles everyday and walked everywhere we went.  Still, I came home feeling a little miserable about all the over eating and immediately set out to make a plan for eating at home this week.

SUNDAY: ROAD TRIP
We were driving all day and in the car at dinner time.  I had packed lunches but we stopped at McDonalds per the kids request at dinner time.  Nathan and I aren't McDonalds fans so I opted for some dried fruit and a Diet Dr. Pepper. 
 
MONDAY:  Breakfast Night - Scramblers
This has become a favorite around here.  It's so easy and the kids love it.

TUESDAY:  Chicken Ole'
I haven't made this in a LONG time.   It used to be a weekly meal but I had forgotten about it.  I love it because I can make it in the crock pot and since it's going to be so hot this week, it will be nice to not have to use the oven.  It's super easy...chicken, salsa, a sprinkle of taco seasoning, black beans, corn....crockpot.  Yum.
 
WEDNESDAY:  Tilapia
I'll probably have Nathan grill this on the grill with some veggies.  I'll throw in some chicken for the picky littlest littles who are not fish fans.
 
THURSDAY:  Strawberry Spinach Salad
Thursdays are ALWAYS pasta night but I am not such a fan of pasta night.  I'm changing it up this week and we are going to make my favorite salad.  I'm hoping the kids will eat this but it's not likely. 

FRIDAY:  Make Your Own Pizza
Nathan's gluten free thing has thrown me but I am pretty sure I can find a gluten free pizza crust, right?? 
 
SATURDAY:  Mexican Layered Dip
I know this isn't really supposed to be dinner but it works.  One of my college room mates used to make this all the time and we'd have it for dinner a lot.  I still love it and my boys do too.

What's for dinner this week?

We did OK last week with the meal planning.  We didn't quite stick to the menu but we did eat at home 5 out of 7 nights.  The Mr. & I squeezed in a dinner and a movie date night early in the week but I shocked myself and cooked for the kids before leaving!  I had a mom fail moment Saturday night when friends asked us out on a double date and I realized later in the evening that I never fed my kids dinner.  Nice, huh?  They survived.
 
Here's what's for dinner this week...

SUNDAY: Father's Day - Chocolate Cake
We're not really having chocolate cake for dinner, although I'm pretty certain that's happened before.  We are headed to my brother's house to celebrate Father's Day and I'll be bringing Lucy's Chocolate Cake.
 
MONDAY:  Breakfast Night - Scramblers
I'm going to pretend like I'm eating outside at Queenies when I eat my scrambler.  I'll take tomato, bacon and spinach in mine, please.  I heart breakfast for dinner night.

TUESDAY:  Mini Chicken Pot Pies
I can't remember exactly why but  these mini pies that were on the menu last week never got made.  Nora was not happy.  She told me all about it several times.  We're trying again this week. 

WEDNESDAY:  Taco Salad
Wednesday is fish night.  Taco Salad is not fish.  I have some taco meat in my freezer from my Once a Month Cooking Group that must be made.  Fish night is cancelled.

THURSDAY:  Pizza Pasta
We had little friends over last week on Pizza Pasta night and opted for spaghetti and meatballs instead.  Pizza Pasta is back on the menu this week.

FRIDAY:  Order In or Eat Out
Because as you know by now, I'm not cooking EVERY NIGHT!!

SATURDAY:  Broccoli Cheddar Soup
This is by far my favorite soup.  I LOVE, LOVE, BIG TIME LOVE it!  Leftovers are my fav.

What's for dinner?

We did it!!  We stuck to the menu last week!  We ate at home every night except for the night that was a designated "eat out" night.  SUCCESS!  We did have one menu change due to a rotten meat experience that has me questioning whether I should become a vegetarian or not.  Seriously, it took me days to get over the horror.  I will spare you the picture.   Believe me, I took one and I think I will go show it to the butcher at the store.
 
The menu has been set for this week.  I'm on a mission to stick to it but I think it's going to be tough this week.  The kids have a few things going on and The Baker and I are going to try to squeeze in a date night.  I'm going to do my best though.  Here's what we're having:
 
SUNDAY: Grill Out  - Hamburgers
It's supposed to be beautiful here this week so I'm planning on a few outdoor dinners.  I'm hoping I can snag some bacon gouda patties at Fresh Market.  I might get myself a veggie burger.

MONDAY:  Breakfast Night - Omelets
We haven't tried this with the kids in a while but I think they will like it.  I'll let them pick what they put in their omelets.  I'm going to make these whole wheat biscuits too.

TUESDAY:  Mini Chicken Pot Pies
Nora LOVES chicken pot pie and I usually make it the traditional way but I saw these mini pies this week and I think I'll give them a try.
 
WEDNESDAY:  Mahi Mahi
Wednesday is fish night.  We haven't done Mahi Mahi in a while.  If anyone has any great fish recipes, please send them my way.  I'd love to try some new ides.

THURSDAY:  Pizza Pasta
Really this is baked penne but when my kids were really little, I called it Pizza Pasta so they would eat it.  It worked and the name stuck.
 
FRIDAY:  Order In or Eat Out
I'm not cooking EVERY NIGHT!!

SATURDAY:  Baked Potato Soup
I used to make this A LOT before we had kids.  Last time I made it, 2 out of 3 kids loved it so it's back in the rotation.

What's for dinner this week?

 
I'm posting our menu again this week with high hopes that it will keep me cooking at home.  We didn't do awesome last week...Oklahoma weather messed up our grilling night and our kid's social lives messed up another.  The BBQ food truck was calling our name one night too.  We only get a 4 out of 7 for last week.  I'm determined that this week will be better.
 
SUNDAY: Grilled Salmon & Veggies
It's supposed to be beautiful here on Sunday.  No tornado warnings...thank God.  We'll be grilling out for sure.
MONDAY:  Breakfast Casserole
I'm excited to try this recipe.  Nathan and I are not huge Canadian bacon fans but all three kids LOVE it so we're going to give it a try for our weekly Breakfast for Dinner night.
UPDATE:  We just had this and while it was YUMMY and the kids all liked it, it was REALLY salty even though I only put about 1/2 of the salt it called for.  Next time I will not use salt and just salt it afterwards if needed.
TUESDAY:  Chicken & Noodles
This one was a request from the kids.  They love it.  Nothing could be easier...crockpot...happy mom.
WEDNESDAY:  Beef Teriyaki
I'm pulling this one out of the freezer from my Once a Month Cooking Group.
THURSDAY:  Pasta & Meatballs
I'm also pulling out the last batch of meatballs from my Once a Month Cooking Group.  Everyone loves them.  No "gross" comments will be heard tonight.
FRIDAY:  Eat Out
I'm not cooking EVERY NIGHT!!
SATURDAY:  French Dips
We used to make these all the time but we had forgotten about them.  Graham mentioned them the other day so they made the menu for this week.

This is not a foodie blog...

I am fully aware that this is not a food blog.  I am lacking in cooking skills for sure.  We do not eat fancy meals in this house.  We eat kid friendly food that will keep the "gross" comments to a minimum.  However, I am on a mission to cook more and to eat out less.  Our main goal is to save money but we'd also like to be healthier in our eating habits.  I thought I would try posting our weekly menu board here on Sundays as a way to hold myself accountable and because I think there might be some of you out there in the same boat.  If meal planning is new to you, you can just use my menu for the week.  I'm happy to share!


Sunday:
beef stew...not really stew season but it's been in my freezer and it's time to use it
Monday:
Banana Pancakes...one of my FAVORITE breakfast meals!  Get the recipe here
Tuesday:
Parmesan Dijon Chicken...I've been cooking this for years and I think I got the recipe in a very old Betty Crocker book that we got as a wedding gift.  So easy and very yummy.  I am sure there are tons of similar recipes out there.
Wednesday:
Grilled Salmon & veggies...Nathan makes the whole dinner on the grill.  It's one of my favorites but Nora will say "gross" for sure.
Thursday:
Spaghetti Squash...this will only be my 2nd time to do a spaghetti squash.  We really liked it the first time.  Have you tried this?  It's really pretty cool.
Friday:
Pizza...probably out but maybe we'll make our own.
Saturday:
Mexican Layered Dip...this is one of Graham's favorites and he's been begging for it.  I know it's really an appetizer but we love to have it for dinner.
