I am SO not a morning person. It's hard for me to function before 8...and to be honest I'd much rather sleep until 9 or so everyday. Of course, with school aged kids that rarely happens. This week is testing week and that note about feeding your kids a healthy breakfast everyday usually sends me into a bit of a panic. I have this fear that during testing week the teachers will quiz the kids about what they ate for breakfast and my kids will be the ones to say "fruit loops" or "a chocolate chip granola bar." We are a grab-a-frozen-waffle-or-granola-bar as you are heading out the door kind of family. I'm just being real...you will never find me in the kitchen making pancakes or eggs at 6:30 am! This week, however, I've got it covered.
Last summer I stumbled upon this recipe on 100 Days of Read Food for Breakfast Casserole Bites. My entire family LOVED them. I had not tried freezing them yet but last month my Once a Month Cooking Group gave them a try and it worked out great. We used foil muffin pans, cooked them and then froze them (still in the tins) in freezer bags. When we were ready to eat them we just popped them out one at a time and put them in the microwave for 1-2 minutes. YUM and EASY!
So on Sunday, I made a batch and my kids will have a healthy breakfast and I won't be cooking at 6:30 in the morning. WIN WIN.
**I LOVE my Once a Month Cooking Group. It's been a HUGE help with healthy meal planning and cooking at home! If they will let me, I am going to try to document a cooking day. They are camera shy...I will probably have to beg and plead.

A Few of My Favorite Things
BABY LIT
While we were at Pinkitzel, I stumbled upon the most adorable board books. I took one look and was smitten with these "Baby Lit" books. I don't have babies anymore but was so tempted to buy them all for myself and I'm still thinking about it. They will be my new favorite baby gift for sure!! I could not get over how cute they all were!!
There are many other options: Jane Eyre, Moby Dick, Alice & Wonderland, Pride & Prejudice & more. LOVE LOVE LOVE them!
MY NEW FAVORITE SNACK
It's a problem how much I love these Dark Chocolate Covered Pomegranate snacks!! I have had to start measuring them out by serving into snack bags to keep myself from eating half the bag in one sitting. They are so good!! I also LOVE the blueberry and raspberry. YUM!
FIT CHIC HEADBANDS
I love Fit Chic headbands SO MUCH that I pretty much wear one everyday! I love wearing them to work out and I love them when I'm having a bad hair day and I love them on Nora and I just pretty much LOVE them! Even better, I know Julie who started the company and I got to hear her story about how it all started the other day and it just make me happy to support other mommy owned businesses.

Super Easy Crockpot Chicken Ole'
I was just getting ready to start our dinner for tonight and I thought I would share. This is one of The Baker's favorite meals and it's SO EASY! All you have to do is get out your crock pot and drop in some chicken breasts ( I use 4.) I usually put them in frozen and start it mid morning. Take a packet of taco seasoning and sprinkle about half of it on top of the chicken. Drain one can of black beans and add them to crock pot. Top that with lots of salsa. I never measure...maybe 2 cups? Cook on low all day. Top with cheese before serving...YUM!
Try it...you'll like it.
BTW, It's snowing today. It was 80 degrees two days ago. CRAZY! I'm done with cold weather!

Yummy...Yummy....Yummy!
Go visit Amber and get her recipe for this delicious soup. It's so super yummy! I made some this afternoon and I'm already thinking about my leftovers for lunch tomorrow. YUMMY!!
